Delicious cauliflower fritters to serve as a side dish or an appetizer! Delicate Mediterranean flavors to enhance any meal or eat by itself. Serve this as part of a buffet or bring to a dinner party to impress the host!
Ingredients:
Olive oil - enough to cover about a 1/4 of a deep frying pan
1 whole cauliflower cut into florets
4 large eggs
1-2 garlic cloves, chopped
½ bunch of chopped parsley
¼ cup of flour
¼ cup of breadcrumbs
1 teaspoon paprika
½ teaspoon turmeric
½-1 teaspoon cumin, depending on taste
1 teaspoon salt
½ teaspoon black pepper
Cut cauliflower into florets, discarding the hard white parts from the center. Place florets in a bowl of water for about 10 minutes. Drain in colander and put in a large bowl. Place in the microwave for about 8 minutes until the cauliflower is tender but not too soft.
Let cauliflower bowl stand for a while to cool down. On a dish towel, place the florets to dry off and to absorb any of the liquids. Return the cauliflower to the large bowl and break them up more to small pieces. Add all the ingredients to this, mix well.
Heat oil in a large medium depth frying pan and when hot place tablespoons of cauliflower mix carefully into pan. Press the mix down slightly in the tablespoon everytime before adding to oil to keep it together well.
Fry on one side for about 2-3 minutes until browned and turn over to fry the other side.
When ready remove with a slotted spoon and place on kitchen paper to absorb oil. Lay on a large flat plate and serve!
