Chocolate Almond Matzah Bark (מצה‎) For Passover or anytime! (לפסח)





Matzah is an unleavened crispy flat bread that is eaten during Passover. What is the reason for eating matzah during the week of Passover? It symbolizes when the Israelites left Egypt in such a hurry they could not wait for their bread dough to rise. The bread when baked, was Matzah.


So we buy lots of matzah for the Passover holiday. Usually much more than we know what to do with. What can we do with all this matzah we bought for Passover? This is by far one of my favorite things to make and eat!


As a kid growing up in Israel one of the things I looked forward to the most on this holiday was chocolate covered matzah. There are a few different variations of this recipe but this is the only one you will need to know!


It is super delicious, quick and simple to make. It also always comes out perfect every time! I make batch after batch.


Beware, it is addictive!



Here's what you will need:


4 square pieces of Matzah - you can use any kind of matzah, regular, gluten free or egg matzah

1 cup of brown sugar

12 ounces of good quality semi-sweet chocolate chips

1 full cup of almonds, ground - some smooth, leaving a few more coarse (I grind my own, it is much fresher than ready ground or chopped almonds)

2 sticks butter (1cup)


Preheat oven to 350 deg.


Cover a baking pan with foil and lay parchment paper on top to cover the bottom. This will totally eliminate a mess, I learned this the hard way.




Place 4 pieces of matzah together. If you still have space in the pan you can break up some more matzah and fill in the areas that are empty



Put butter and sugar in a small pan, mix and bring to a boil over medium heat



Stir with a whisk continually for about 2 -3 minutes lowering the heat a little. The mix will look like it is separating and will slowly become foamy, that is how it is supposed to look



When it thickens it is ready. Carefully pour the hot mix over the matzahs



I like to use a brush to evenly spread the caramel mix. You can use a spatula too



Place matzah with caramel in the oven for about 10-12 minutes. Watch as it bubbles and remove being careful not to leave it to burn. Immediately sprinkle your chocolate chips event over the caramel and let it sit for 1-2 minutes



The chocolate will quickly start to melt over the caramel mix. Use a spatula to start spreading the chocolate.






Spread evenly on top to cover entire matzahs



Sprinkle ground almonds on top of chocolate spread




Put the entire baking tin in the refrigerating for about an hour. Take out when hardened and break into pieces. You can also cut it with a knife into squares but I like the way it looks better broken up unevenly. You chose!


Keep refrigerated or freeze and take out when you want.
