Moroccan Style Salmon fillet - A simple version to my Moroccan Fish




My Grandmother's Moroccan Fish is by far my favorite fish dish. I posted the recipe a while ago for it. This is a simplified less exotic but delicious version. Quick to prepare for a Mediterranean Healthy dinner!


Here's what you need:


4 portions of Salmon fillet - I used 8oz portions. But any size will do

2-3 tablespoons olive oil

1 teaspoon salt

1 teaspoon cumin

1 teaspoon Philadelphia Spice from Israel or sweet paprika if you don't have that

½ teaspoon turmeric

½ teaspoon ground black pepper

1 large or 2 small tomatoes chopped

½ cup of chopped fresh parsley

2-3 cloves of garlic, crushed

1 small can of tomato sauce

1 cup water

All spices and salt can be adjusted to taste


Rinse the salmon fillet in cold water gently pat them dry on a paper towel as seen in the video.

Heat the oil in a pan, sear each side for a minute or two and remove from pan, set aside.

In same oil add chopped tomatoes stir and let stew a bit.

Add spices and stir for 2 minutes until tomatoes look soft and spices are blended in well.

Add chopped garlic and stir in.

Add tomato sauce and water a little at a time judging the thickness of the sauce. You can make it thicker or more watery it's up to you.

Add the salmon fillet and cover for 15 minutes on medium heat. There should be a small amount of bubbling in the pan.

Lastly add the chopped parsley to the top of the fillets and baste the sauce with a spoon to cover fish. Cook covered for another 3 minutes.

If the sauce has been absorbed too much add more water and stir for a minute or two.

If it is too watery leave the cover off and cook for a few minutes until sauce thickens.

Voila!

The easiest salmon dish you'll ever make that looks like so much work went into it! Serve with rice or couscous!!
