My Spinach Salad topped with warm sautéed onions and sesame seeds



In Israel our daily meals schedule is a little different than in the USA. Traditional we eat our larger main meal at lunch time. It can often include a soup and a hot meal.


At supper time, in the early evening, we like to eat lighter. A salad, eggs, a yogurt and some goat cheese is quite common.


I love spinach whether it is cooked or raw. There are so many dishes you can create with it.


In this light supper salad there is a bit of everything while keeping it simple and not overcrowded.


I came up with this salad one night when I wanted a light addition to the dinner. It was delicious and so fresh tasting. It has since become a regular salad in our home. If you prefer it to be vegan you only have to omit the eggs!


I am sharing the easy recipe with you, I hope you enjoy it as much as my family does. Delicious anytime eaten on it's own or as a side salad.


Ingredients you will need:


For the salad:

1 large package of fresh spinach leaves - 5oz or 142 grams

2 tablespoons olive oil

Juice of ½ a lemon

½ teaspoon salt

½ teaspoon black pepper

hard boiled eggs - 1 per person

1-2 teaspoons raw sesame seeds


For the onions: all spices and seasoning can be adjusted to taste

1 onion sliced

2 tablespoons olive oil

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon turmeric

½ teaspoons paprika

½ teaspoons cumin


Heat olive oil in a pan and add sliced onions. Sauté until translucent. Add spices and continue to sauté for about 3 more minutes until all is well mixed and the onions begin to brown a little around the edges.





In a small frying pan, heat the sesame seeds dry. Do not add oil. Toss them for a few minutes until just starting to turn color a little. The flavor of roasted nuts is so much better than using them raw.



Slice the hard boiled eggs.


Whip together the olive oil, lemon juice, salt and pepper in a small glass bowl. Toss in to the spinach. Place salad in individual salad bowls. Arrange the hardboiled sliced eggs and add the sautéed onion mix in the center. Top with the roasted sesame seeds.


That's all there is to it. A healthy addition to the menu!
