Out of all the salads I serve to my guests, this is by far the most popular! In Israel this is almost a daily addition to any meal. It is also added to a pita sandwich filled with falafel or shawarma. It happens to be the easiest salad you will ever prepare and the one that will bring you the most compliments!
What makes this simple salad Israeli? Most definitely the way you chop your vegetables. They must be chopped into very small cubes and be uniform in size! I have used a small vegetable chopper for years to save doing all the chopping by hand. It has been a lifesaver for making a salad large enough for a few people. I have added it to My Favorite Tools section.
Ingredients:
4 medium sized tomatoes, medium hard
3 medium sized cucumbers or 1 english cucumber
4 sprigs of chopped scallions or spring onions (optional)
1 cup of freshly chopped parsley
A little salt according to taste, about ½ teaspoon
Fresh black pepper according to taste, about ¼ teaspoon and offer more when serving.
Juice of half a medium lemon
1-2 tablespoons of olive oil
Chop the tomatoes and cucumbers into very small cubes. Place in a large salad bowl and add the chopped scallions, parsley and mix together. If not serving immediately cover with saran wrap and place in refrigerator until ready to serve.
In a small bowl, place lemon juice, olive oil, salt and pepper and whisk together. Set aside. Just before you are ready to serve the salad, add the dressing and mix all ingredients together. Serve in center of table.
